Sri Lanka produces 85 % of the world demand of Cinnamon. Sri Lankan Cinnamon has a very thin, smooth bark wich is light-yellowish brown in color. And it has more aromatic and pleasant flavor than cassia. Cassia has a much stronger flavor than Ceylon cinnamon which is medium to light reddish brown in color. Cassia has hard and woody texture. All layers of bark are used for powdering.
About 75% of Cinnamon used in North America is Cassia Cinnamon which called Cinnamon Verum comes from Indonesia. The balance 25% that is consumed in North America is " True Cinnamon " which comes from Sri Lanka.
