Cumin seeds
can be used ground or as whole seeds. Cumin was also used heavily in ancient Roman cuisine. It helps to add an earthy and warming feeling to cooking, making it a staple in certain stews and soups, as well as curries and chili. Cumin is a very popular spice worldwide, being second only to black peppercorns.
Cumin, besides being used medicinally, was in the Middle Ages one of the commonest spice of European growth. It is a small annual, herbaceous plant, indigenous to Upper Egypt, but from early times was cultivated in Arabia, India, China, and in the countries bordering on the Mediterranean.
Traditional Medicinal Uses:
Stimulant, antispasmodic, carminative. The older herbalists esteemed cumin superior in comforting carminative qualities to fennel or caraway. Formerly cumin had considerable repute as a corrective for the flatulence of languid digestion and as a remedy for colic and dyspetic headache. Bruised and applied externally in the form of a plaster, it was recommended as a cure for stitches and pains in the side caused by the sluggish congestion of indolent parts, and it has been compounded with other drugs to form a stimulating liniment.
Note:
I am the former owner of Sequoia Family Market in Felton, managed the vitamin, herb, bulk and grocery departments at New Leaf Community Market on Mission, opened the new Whole Foods grocery and bulk departments in Los Gatos, and spent 20 years of my life pioneering and promoting natural foods and organic agriculture, lecturing, writing articles and standing behind my cash register. To fight organic fraud, I founded the Santa Cruz County Organic Retailers Association back in the late 1980s to define organic and other agricultural terms and to initiate county-wide similarities in labeling and certification of small family farmers. I was trained as a CCOF organic farm inspector in 1994. I am not a little pop-up internet spice shop (hence I have many personally wild-crafted and unique items, as well as the usual plethora of organic herbs and spices). I am a native Californian with over 35 years of organic food and herb experience, online now to serve you... and for those who enjoy it, herbal lore and personal anecdotes.
